Water treatment is a recipe decision

Espresso is almost entirely water, and the mineral content of that water changes what comes out of the machine as much as the beans do.

Too soft is as bad as too hard. Strip the minerals out entirely and the coffee tastes flat and the machine's water level probes stop reading properly. Roasters publish target figures for a reason.

Scale is what kills espresso boilers. On Wise County water an untreated machine will scale quickly, and the repair costs several times what treatment would have. Manufacturers usually void warranty cover over it too.

Match the filter to your water, not to the shelf. The right cartridge depends on what is in the supply, which means a test first. A softening cartridge on water that needed carbon only is money wasted and a taste problem.

Filters are consumables with a volume rating. Past capacity they stop working and become a place for growth. Track them by volume through the machine rather than by the calendar.

Behind the bar: drains, waste and hot water

The rest of the fit out is small, and it goes wrong in the same three places every time.

Put a floor sink in behind the counter. The machine, the ice well and the dipper well all run water away continuously, and each one has to break to open air above the sink rather than being piped straight into a waste line.

Coffee grounds are the blockage. They behave like fine sediment, settling and building along the line. Knock boxes get emptied into a bin, never rinsed down a sink, and a strainer at the wash-up catches what escapes.

Milk and syrup are the other half. Sugars and fats build a film that catches everything else, which is why a café drain that has run for two years without jetting is usually narrower than anybody realises.

Staff need a basin of their own. Not the wash-up sink, within reach of where drinks are made, plumbed for hot as well as cold. Inspectors look for it specifically and small cafés are the ones that most often do not have one.

Hot water is for washing up, not for coffee. The machine makes its own. Size the heater against the end of service rather than the drinks menu.

How a call plays out

Say which of the three it is: the machine's water supply, the drains behind the counter, or something an inspector has written up. If the answer is water quality, a test result is worth far more to us than a guess at which cartridge to fit.
