The preparation room

Everything unusual about this building type is in one room, and it is worth getting right at fit out because retrofitting it means taking the room out of service.

Aspirators are a serious cross connection. Equipment that uses running water to create suction is directly connected to both the supply and to waste, and it needs backflow protection of the right type, tested rather than assumed.

The table and sinks need proper indirect drainage. With traps, with fall, and built so they can be cleaned thoroughly. A direct connection is not acceptable here for the same reasons it is not acceptable in a food facility.

Floor drainage matters because the room is washed down. A gully with a proper trap, a floor laid to fall, and a trap that stays primed even when the room is not used for a week.

Hot water has to be there when it is needed. The room is used unpredictably and at any hour, so recovery matters more than a large tank sitting cooling overnight.

Ventilation and plumbing are connected here. Traps that dry out in a room used intermittently let odour into a clinical space, and that is the complaint we are most often called about.

The public side, and keeping the two apart

The front of house is ordinary commercial plumbing held to a much higher standard of reliability, because the days it matters are not days anything can be postponed.

Restrooms are judged closely. Families are in the building at the worst moment of their lives. A running toilet or a cold tap registers far more than it would anywhere else.

Capacity is occasional and heavy. A large service fills the building for two hours. Fixture counts and drainage have to cope with that rather than with a normal day, which is nearly empty.

Keep clinical and public drainage separated as far as the design allows. It simplifies maintenance, it contains any problem to one side of the building, and it makes a blockage in the back a private matter.
