About this serviceGreater San Antonio
Everybody warns a restaurant about grease. Nobody warns a bakery about flour, which is a shame, because flour and water make a paste that sets inside a pipe and is considerably harder to remove than fat.

Rinsing a mixing bowl seems harmless. Repeat it forty times a day for a year and the pipe tells a different story.

Dough hydrates in the line and sets. What goes down as a cloudy rinse becomes a dense paste further along, where the pipe is cooler and the flow slows. It does not break down and it does not wash through.
Cabling struggles with it more than with grease. Set dough grips the pipe wall. Jetting is what removes it, and a bakery line that has never been jetted is usually carrying a surprising amount.
Scrape and bin before anything reaches the sink. A rubber scraper, a bin at the wash-up station and a habit enforced with staff. It is the whole of the prevention and it costs nothing.
A solids catch at the wash-up sink is worth fitting. Something removable that collects what the scraper missed, emptied at the end of each shift rather than when the sink is slow.
A bakery's day is the wrong way round compared with other food businesses, and the plumbing follows that.
The hot water peak is at the end, not the middle. Wash-up after production, all at once, often before dawn. Recovery has to cover that window rather than an average day.
Proofers and steam ovens need their own supply and drainage. Often filtered, sometimes with specific requirements from the manufacturer, and always with an indirect drain rather than a direct connection.
Floors get washed at the end of every shift. That means drainage that can take a hosed or heavily mopped floor, with a catch for the flour and debris that comes with it.
Grease is still there, just less of it. Butter, pastry and cleaning residue add up, and most bakeries still need interception even though the kitchen looks dry compared with a restaurant.
Hard water shows up in the equipment first. Steam generators and boilers scale quickly on Bexar County water, and treating the feed costs less than the descaling and the eventual replacement.
Tell us what hours you produce and whether the sink or the floor drain is the problem. We would rather come at ten in the morning when the ovens are off than at four when they are not.
Somerset, Lytle, Von Ormy and the southern edge of Bexar County are on our round. We jet bakery lines rather than cabling them, we size hot water against the wash-up window, and we will set up a maintenance interval from what the camera actually shows in your pipe.
FAQ
In a bakery, yes. Flour and water make a paste that hydrates and sets along the pipe, and it grips harder than fat does. It is also harder to cable out, which is why these lines need jetting.
Scrape every bowl and tray into a bin before it reaches the sink, and fit a removable solids catch at the wash-up station that is emptied each shift. That habit prevents nearly all of it.
Usually yes. Butter, pastry and cleaning residue add up even though the kitchen looks dry compared with a restaurant, and the requirement is set locally rather than by how greasy it feels.
Because the peak comes at the end of production, all at once, and often before dawn. Recovery has to be sized against that window rather than against an average day's use.
No. It needs an indirect connection, and often filtered feed water as well. The manufacturer usually specifies both, and it is worth reading that before the fit out rather than after.
Set it from a camera survey rather than a guess. Most production bakeries land on twice a year, and a line that has never been jetted is usually carrying more than anyone expects.
